Upgrade Your Salad With Espresso Vinaigrette

Sometimes eating healthfully can be tough. As Kermit suggests, it’s not easy *eating* green, either. Try as we might, sticking to a virtuous diet is a constant struggle for some of us. If you prefer to ingest most of your daily calories via Frappucino, I’ve got a solution for you: coffee-flavored salad.

It’s true. You can put espresso in your vinaigrette and call it health food. Your salads needn’t be monotonous anymore. According to Bon Appétit, espresso vinaigrette can jazz up your necessary quotient of leafy greens. The experts recommend pairing this dressing with frisée and grilled vegetables including onions, tomatillos, nopales, and other veggies that can handle charring. For added kick, throw in some queso and parsley.

You will need:

  • a mixing bowl
  • a whisk
  • 3 tablespoons Sherry vinegar or red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon instant espresso (we like Nespresso!)
  • ⅓ cup olive oil
  • Salt and pepper, to taste

First, combine your honey, selected vinegar, and instant espresso in your mixing bowl, ensuring all elements have dissolved together. Next, while aggressively whisking, slowly introduce the olive oil. Add as much salt and pepper as you deem necessary.
