Iced Coffee Hack: Make Coconut Milk Ice Cubes

Aloha! Has the summer heat dampened your spirit? We’ve all been there. Here’s a new way to beat the heat with some tropical flair: add frozen coconut milk cubes to your iced coffee.

Coconut milk is having a moment lately, and not without reason. In addition to infusing your morning cup with some island vibes, coconut milk contains much nutritional value. Rich in vitamin C, iron, and potassium, this dairy-alternative can boost your immune system and improve heart health. Plus, great news: it’s paleo! And plant-based! And low-carb! Since coconut milk already contains a subtle sweetness, we find this recipe to be very handy for those of us trying to cut down on our sugar intake.

You will need:

  • a mixing bowl
  • a whisk
  • an ice cube tray
  • a can of coconut milk

First, whisk your coconut milk in the mixing bowl until it gets nice and creamy. Next, pour the creamy coconut milk into an empty ice cube tray, distributing it evenly. Leave this tray in the freezer for at least three hours — in fact, maybe even try to complete this step the evening before you’ll want your next caffeine fix. When you’re ready for your treat, simply add four or five frozen coconut cubes to your glass of coffee. Boom! Tropical bliss!
